About this model

My pasta machine has two adjustable knobs to set the thickness of the rolled out dough, but there is no means of getting a direct measurement for what that thickness is. Moreover, because each side can be individually adjusted, if they are not set to the same width, you will get a banana of dough as it yaws from one side to the other if you don't get the thickness the same on each side. Commercial machines use a Go / No-Go gauge or thickness shim to set this width... so I made my own.
